Sometimes, when I’m a little bit stressed, I bake. I also bake when I’m trying to avoid doing things. Instead of finishing my portfolio and starting two essays, I made these coffee and caramel sponge cakes. I found the recipe in the paper on the weekend and thought I’d try it out. They are simply delightful, if I do say so myself. My first attempt at making the caramel was a disaster (I ended up burning it. The bottom of the saucepan was black. It was not fun to clean up). The second attempt was much more successful, and I would almost say easy, maybe because this time I knew what not to do.
